Teriyaki Panini Sandwich

Teriyaki Panini Sandwich
Prepare teriyaki sauce by mixing soy sauce, sugar, olive oil, garlic and ginger to taste along with fresh cracked pepper in small bowl.
Take package of tempeh and split it through the thickness, leaving you two long flat pieces.
Cut each long piece into three pieces; you have enough for four sandwiches, using 1-1/2 pieces each.
Marinate tempeh for 20 minutes or longer.
Drizzle some oil in a nonstick pan; brown tempeh slowly on each side. Brush more teriyaki sauce on each piece.
Cut red or yellow bell peppers into thin slices; cut onions into thin slices. Brush with any leftover sauce and brown in the same pan that cooked the tempeh.
Slice two pieces of textured Artisan bread for each sandwich. Put desired dressing on the bread: Vegennaise, Earth Balance, mustard. Layer the tempeh with the vegetables and top with the other slice of bread. Grill in panini press, or brown in same pan. If using a pan, use caution when turning sandwich over so the sandwich stays intact.
Slice at a diagonal. Add fresh fruit, vegetables or avocado slices and a few pepperoncini.
